Off to a Great Start!
I wanted to get a few days of keto in before starting and OMG! I lost 7 pounds in those 3 days. Now, yes some was water but I can guarantee some was not. My body was in a huge state of inflammation because I am a Gluten Sensitive and I had been indulging over the holidays.
It feels wonderful to begin this diet for weight loss after already dropping 7 lbs. So, here we go. I unfortunately did not get all my meals in today~ but I am certain I am good.

Breakfast Day One
Here is my breakfast. Simple, easy and filling. Two eggs to which I added heavy cream instead of eating an avocado. 2 slices of bacon and a “bulletproof” coffee.
This excluding the coffee is what I have been eating the past few days anyway, except yesterday I had no breakfast.
The meal was satisfying and yummy.
Let’s Make The Keto Soup!
I only did the two meals today so let’s move on to the soup.
Here are most of the items that I needed to chop to add to the soup. Being frank, I am not a fan of mushrooms, never tried sun-dried tomatoes and wasn’t planning on it, and collard greens I’ve never had except at Paula Deens. But I am willing to TRY!
Here is the finished product! It really looks quite good but not like the photo of the one on the recipe. Mine is darker in color which could have only come from the tomatoes and red wine vinegar I think.
I cautiously took a bite and had some items in the spoon like a mushroom and collard green that I was unsure about but it was quite tasty! No one item overtakes the flavor and it is just a great savory soup and for this time of year it is pretty perfect!

So I have not eaten all of the food on the diet for today but it was all I could get in because of my schedule today.
